Red Velvet Cupcakes

Ingredients:
Wet Ingredients: 1/4 Cup unsweetened beet juice 3 Tbsp unsweetened lemon juice 3 Tbsp beet powder 1/2 Cup melted vegan butter 3/4 Cup liquid egg whites 1/4 Cup unsweetened almond milk 1/2 cup light agave nectar 2 tsp non-alcoholic vanilla extract
Dry Ingredients: 1/4 Cup unsweetened cocoa powder 1 1/4 Cups of cassava flour 2/3 Cup coconut sugar 2 tsp baking powder 1/2 tsp baking soda
Instructions:
Prep
1. Preheat oven to 325° Fahrenheit.
2. Prep a cupcake or muffin tray with cupcake liners.
3. Mix together the beet juice, lemon juice, and beet powder and set aside for later.
4. Add all remaining wet ingredients to a stand mixing bowl.
5. Mix wet ingredients on low, for about 30 seconds, until uniformly combined.
6. Then add in dry ingredients and stir on medium, for about 1 minute, until also uniformly combined.
7. Scoop batter, about 1/3 cup at a time, into prepared liners.
8. Bake in oven for 30-35 minutes or until golden reddish-brown and a toothpick comes out clean.
Tips: Check that the butter is not too hot when adding it to the liquid or it will cook the egg whites. Use silicone cupcake liners so cupcakes won’t stick to liners. Wait till the cupcakes are completely cool, before frosting, for best results.
Beet powder, as a natural food coloring is available on amazon.
Vanilla Frosting

Equipment • Measuring cup • Tablespoons • Piping bag (opt.)
Ingredients: 1 cup coconut palm shortening 1/4 cup light agave nectar 1 Tbsp alcohol free vanilla extract 2 Tbsp cornstarch or arrowroot starch Instructions
Prep:
1. Add all ingredients to stand mixer.
2. Using the whisk attachment, mix ingredients on high, for about 1 minute, until they are uniformly whipped together.
